The LOST DISTILLERY Archive Team studies key components that would have influenced the character of some of these long lost whiskies. Fernet Del Frate AngelicoFernet is its own bitter category and this extremely bitter concoction was most likely created to counteract the effects of cholera and malaria, but went on to be used for everything from a cure-all tonic to hangover cure. Most recipes typically share ingredients such as Aloe, Saffron, Quinquina, Gentian, Anise, Angelica, Mint and Myrrh. This amazing liqueur can be sipped on its own, but shines in skilfully-made cocktails and is a multifaceted substitute for cocktail bitters.

Gran Centenario is Mexico’s most award winning ultra-premium tequilas. Named in 1895 to commemorate the turn of the new century, Gran Centenario has remained family owned and continues to be hand crafted in small batches at Hacienda Los Camichines in Jalisico, Mexico. Del Maguey MezcalDel Maguey offers a collection of exceptional, rare and unblended mezcals created by individual family producers in remote villages throughout the state of Oaxaca, Mexico. The agave hearts are roasted over hot stones in a pit for three to five days, then ground to mash by horsepowered stone mills. This is followed be extensive fermentation in wooden vats and a slow process of twice-distilling in wood-fired clay or copper stills. The resulting flavours are smoky, deep and warm. Vida was created especially for use in cocktails and Crema De mezcal contains 10% unfermented agave syrup. All the other mezcals in the range are named after the villages in which they are produced.

Whitley Neill is a traditionally distilled London Dry Gin, we use a small antique copper pot still “Constance”, but it also includes two unique African botanicals (I have a South African wife and so I wanted to find some South African botanicals that would alter the flavour profile somewhat) – the fruit of the Baobab tree and Cape Gooseberries. These very unique citrussy botanicals sit alongside 7 quite traditional gin botanicals - juniper, coriander, orange peel, lemon peel, Angelica root, cassia bark and orris root.

KammerlingsThe creator of Kamm & Sons, Alex Kammerling is an ex-bartending, cocktail maestro and self-professed drinks geek. Kamm & Sons is not like other spirits. Although it is made in a similar way to gin (and also contains juniper berries), it has a total of 45 natural botanicals. The main ingredients are ginseng, fresh grapefruit peels and manuka honey and it is blended to a lighter 33 per cent abv. Fresh and citrusy on the nose with light anise and juniper notes, its palate is sweet, rich and herbal, finally ending with a long, honeyed bitterness.
