By proceding its name with "Est Est Est", this wine is afforded the highest compliment for wine quality. History says that in the 12th Century, a wine-loving bishop was traveling through the Italian countryside to visit the Pope. He sent a scout ahead of him to mark the inns that had good wine with a sign above the door; "Est" ("It is"). As the story goes, Montefiascone, the area in which this wine was created, was bestowed the honour of three proclamations.
