Sullivans Cove Old & Rare bottlings are reserved for the very few casks we allow to age for at least sixteen years. Our philosophy is to bottle our whiskies when we think they’re at their peak of flavour and character, regardless of age. The vast majority of our whiskies hit their peak at around 10-12 years, but every once in a while our skilled distillers identify a cask with the specific characteristics that allow for extended maturation. The result is the oldest and rarest of Australian whiskies – something only possible at Sullivans Cove as the only distillery in Australia that has been using full-sized casks since the mid-1990s.
Our old and rare whiskies have incredible length and breadth of palate; rich, oaky and hugely textural while still retaining the unmistakable brightness and character of Sullivan's Cove’s unique spirit. These whiskies have won several major awards in the last two years, including World’s Best Single Cask Single Malt at the 2018 World Whiskies Awards, and a Master at the 2018 World Whisky Masters.
Each bottle is presented in a unique, hand-made, solid wood presentation box and includes a letter of authenticity hand signed by our Head Distiller, Heather Tillott. An incredible rarity and a milestone for both Sullivans Cove and the Australian Whisky Industry, these whiskies are a true piece of Australian whisky history.
