We talk about Praxis wines being ‘drink now’, and this bubbly méthode traditionnelle beauty is exactly what we’re talking about. Fresh, fun and surprisingly moreish, the nose is all crisp orchard fruit, sweet citrus, and honeysuckle florals, while the palate—with a soft, extremely effervescent mousse, aided by six months on lees—balances a taut, lingering acidity and tart, apple-y fruit notes against a ripe hint of nashi pear sweetness. A great starter (or finisher). One bottle may not be enough.
