Distillerie Gabriel Peureux is a historic Franche-Comté spirits producer based in Fougerolles the capital of French kirsch production in the Haute-Saône and the originator of Griottines: wild Morello cherries macerated and preserved in kirsch and liqueur at 15% ABV. Fougerolles has been France's primary cherry-spirit producing area since the 18th century, using cherries from the surrounding Haute-Saône orchards. Griottines have become a benchmark ingredient in pastry and spirits across French gastronomy.

Griottines occupy a singular category in the Bouchon spirits catalogue: a pastry/bar ingredient with strong gastronomic provenance rather than a sipping spirit.
