Distilleries et Domaines de Provence has worked from the same Forcalquier distillery since 1898 — high in Haute-Provence, surrounded by the wild thyme, sage and mugwort hills its botanical larder draws on. Henri Bardouin pastis, the house's grand cru, blends over 65 plants and spices, many still hand-picked in the medieval herbalist tradition. In 1999, after the post-1915 absinthe ban was lifted, this was the first French distillery to put absinthe back into legal production — the modern Henri Bardouin Absinthe is bottled here.
