Germana is a Brazilian cachaca producer making artisan aged and unaged expressions from the Vale do Paraiso region of Minas Gerais the Brazilian state most associated with premium cachaca production. Cachaca is Brazil's national spirit: distilled directly from fresh-pressed sugarcane juice (not molasses), which gives it a distinctly different character from Caribbean rum more vegetal and grassy when unaged, more complex and oak-influenced as it takes on time in traditional Brazilian woods (amburana, jatoba, balsam) or more conventional French or American oak.

The Germana range covers amber (aged) and double aged expressions, with the oak-aged versions showing the characteristic vanilla, spice, and fruit integration of long maturation in tropical conditions. For on-premise programmes building a Brazilian cachaça section or serving a clientele interested in South American spirits, Germana provides the artisan Minas Gerais reference a counterpoint to the commercial Leblon and Leblon-tier brands and an introduction to the premium aged cachaca category.

60ml Cachaça
30ml Fresh Mango Juice
10ml Fresh Lemon
1 dash Homemade Chilli Bitters
Method

Combine all ingredients in a shaker, fill shaker with ice and shake had for 15 seconds. Strain through a hawthorne strainer or a slottet spoon into a tumbler glass. Homemade Chilli Bitters recipe*: Blend 50 mustard seeds, 10 red dried chillies, 1g anise stars, 2 almonds, 2 hazelnuts, 2g freshly ground cinnamon & 5 juniper berries in blender for 2 seconds. Then add 150ml vodka, 50ml rum & 30ml sugar syrup. Leave for 2 months in a good screw-on glass with occasional shaking and constant room temperature. Filter twice through a pass cloth after two months and fill in dashbottle.

60ml Cachaça
7ml Massenez Abricot (Apricot) Liqueur @distilleriemassenez
45ml Fresh Orange Juice
20ml Fresh Lemon Juice
20ml Chilli Sugar Syrup
1 dash Orange Bitters
Method

Cut the bell peppers into small pieces and muddle. Add the other ingredients and dry shake. Add ice and shake again then fine strain into wine glass filled with fresh ice.

30ml Vedrenne Raspberry Liqueur
30ml Cachaça
30ml Vedrenne Cane Sugar Syrup
30ml Raspberry Purée or Crushed Fresh Raspberry
Method

60ml Cachaça
30ml Dragonfruit Syrup (@chenaholic recipe below)
Method

Muddle the lime, add the cachaça and syrup, shake with ice and open pour into glass. Garnish with dragonfruit dice and mint leaves. Add a little extra syrup for more of that colour. Syrup recipe: heat up 1/2 cup of water and 1/2 cup white sugar in a small pot. Cube half a dragonfruit and leave on the pink rind. Add to the pot and cook until sugar is dissolved. Pour all content into a mason jar and let it sit for 3-4 hours until syrup turns hot pink. Separate the solids out with a sifter.
