Jasper Hill is a biodynamic estate in Heathcote (Victoria), run by Ron Laughton one of the foundational figures in demonstrating what the Cambrian-era soils of the Heathcote ridge can produce from Shiraz. The two flagship wines Emily's Paddock (Shiraz/Cabernet Franc) and Georgia's Paddock (Shiraz) are named after the Laughton family's daughters and have been produced from the same vineyard blocks since the 1970s, making them among the most site-specific and age-worthy Australian reds in the catalogue.
Production is deliberately tiny and sold primarily through the mailing list; availability at Bouchon is limited. The Jasper Hill wines represent the Heathcote proposition at its most concentrated: Cambrian red soils (a distinctive iron-rich ancient substrate), dry-farmed biodynamic viticulture, and winemaking that favours extraction and longevity over early approachability.
