PIXAN is a Mexican aged rum produced in Mexico the 8-year and 15-year expressions are column-distilled cane spirit aged in American oak barrels under Mexico's tropical climate, which accelerates maturation relative to European and North American ageing conditions. Mexico's rum production is less well known internationally than Caribbean or Latin American benchmarks, but the tropical ageing conditions and local sugarcane traditions produce spirits with distinct character at accelerated maturation. PIXAN's name references Mayan tradition.
Within the Bouchon rum section dominated by Caribbean and French rhum agricole producers PIXAN provides the sole Mexican rum expression, adding geographic diversity and a Latin American mainland perspective on aged sugarcane spirits. The 15-year in particular competes with premium aged Caribbean rums on maturity and complexity. For programmes with a serious rum section built on provenance and age diversity, PIXAN fills the Mexican rum position that no Caribbean producer can occupy.
