Sake

Sake is brewed from rice — polished short-grain rice, water, koji mold (Aspergillus oryzae), and yeast. The polishing ratio is the primary quality indicator: Junmai Daiginjo (polished to ≤50% of original grain size, no added alcohol), Junmai Ginjo (≤60%), and Junmai (≤70%) represent ascending residual rice presence and descending price point. The brewing cycle takes place between October and March in cold-room conditions; modern sake brewing uses precise temperature-controlled fermentation to manage the parallel saccharification and fermentation that distinguishes sake from other fermented grains.
