St. Petroni is a Galician vermouth producer based in Padrón, north-western Spain. Founded in 2014 by Cristina Codesido at Vermutería de Galicia, the house takes an unusual approach: instead of starting from neutral white wine (the Italian and French model), St. Petroni uses Albariño from vineyards near Pazo Arretén in Rías Baixas, fermented on its lees and aromatised with 29 selected herbs and botanicals.

The range is built around Rouge and White (Blanco) at 15% ABV in 1-litre format aimed at on-premise service. The wines pour as classics — neat and chilled, over ice with a slice, or as the spine of a Negroni or White Negroni alongside a quality gin and a bitter aperitif.

Within Bouchon's vermouth range, St. Petroni sits as the Galician-Spanish entry alongside Dolin (Chambéry, Savoie) and Maidenii (Daylesford, Victoria).
