Domaine Cauhapé is the reference producer in Jurançon (Pyrénées-Atlantiques, Southwest France), built by Henri Ramonteu from a small estate into the benchmark for the appellation. Jurançon produces white wine only from Gros Manseng and Petit Manseng grown on steep terraced hillsides above the gave de Pau in both the dry Jurançon Sec style and the sweet Jurançon moelleux, made from late-harvested and often passerillé (vine-dried) Petit Manseng. Cauhapé's dry range (Chant des Vignes, Ballet d'Octobre) and sweet range (Quintessence, Noblesse du Temps) represent the full quality spectrum of the appellation.

Jurançon moelleux from Petit Manseng is one of the most distinctive sweet wines in France: not botrytised, but produced from naturally concentrated berries dried on the vine through the autumn passerillage process, retaining acidity alongside the concentrated sweetness. For programmes building a serious dessert wine section beyond Sauternes, Jurançon provides the Southwest French alternative higher acidity, more exotic aromatic profile (passion fruit, spice), and lower oak influence. Cauhapé is the only Jurançon producer in the Bouchon catalogue and the appellation's undisputed quality reference.
