Dos Maderas is a premium rum brand produced by Williams & Humbert, the Jerez sherry house, using Caribbean rum (from Barbados and Guyana) that is first aged in the Caribbean before being shipped to Jerez for a second ageing period in ex-Pedro Ximénez and ex-Palo Cortado sherry casks. The name 'two woods' in Spanish references this double-maturation in two different oak environments: Caribbean tropical ageing followed by the humid Jerez solera cellars. The result is a rum with Caribbean spirit character structured and sweetened by sherry-cask influence.

As a product of the sherry house Williams & Humbert, Dos Maderas benefits from the same solera infrastructure and cask quality that Williams & Humbert applies to its sherry programme. The Dos Maderas 5+3 and 5+5 age statements reference years in the Caribbean plus years in Jerez. For programmes building a sherry-adjacent digestif section or cross-category storytelling between rum and fortified wine, Dos Maderas provides the clearest product example of sherry-cask rum outside of specialist independent bottlings.

Method

Cut open vanilla, bring everything to boil until sugar has dissolved. Stir occasionally. Simmer for 15 mins and filter, then pour into a bottle.

5 Dashes Orange Bitters
Method

Method

1 barspoon Cane Sugar
Method

Soak the sugar with the bitters in an old fashioned glass. Add 3 ice cubes and half of the rum. Stir to dilute and blend. Add more ice cubes and the rest of the rum. Stir to obtain the desired dilution. Garnish with orange zest and flambèed cinnamon stick. Photo credit: @spiritselite @hserhum

Fever-Tree Ginger Beer @fevertreeaustralia Muddle 3 strawberries with grenadine in a tall glass and set aside. In a shaker add both rums, and lime and shake with ice. Strain into a glass over ice and top up with half lemonade and half ginger beer. Garnish with a strawberry. Cheers🍹⁠

Method

Garnish: Mint Sprigs & Strawberry To a glass, add strawberry syrup, lime juice, mint leaves, rum, with ice and stir until mixed. Top up with soda and more ice. Garnish with mint sprigs and strawberries.

2 tsp Unsweetened Cocoa Powder
Method

Optional Garnish: Bananas, Chocolate Drip, Whipped Cream, Sprinkles, Chocolate Covered Banana Slices In a blender add all ingredients (minus garnish) with ice. Blend until smooth. Pour into glass and garnish accordingly Enjoy! Glass Garnish: place slices of banana on the inside of the glass. Place in the freezer for 15 mins or until firm. Melt chocolate and a little bit of coconut oil until drippy consistency. Remove glass from freezer and generously dip the rim into the chocolate, flip over and tap for dripping chocolate. Gently add more chocolate with a spoon and place in the freezer until hard. Dip the top of the rim into chocolate again and dip into sprinkles. Place back in the freezer for ready to serve!

2 Charred Pineapple Rings Muddle charred pineapple rings in a shaker. Add rest of ingredient with ice and shake to chill. Double strain into a hurricane glass over crushed ice. Garnish with two pineapple fronds, a charred pineapple slice, and a dehydrated lime wheel.
