Habitation Saint-Étienne (H.S.E.) is a Martinique rhum agricole estate at Rivière-Pilote in the south of the island one of the few remaining estate distilleries in Martinique, operating from a traditional habitation (plantation and mill) established in the early colonial period. H.S.E. is within the AOC Martinique zone and produces fresh-cane-juice agricole rum in both blanc and aged expressions. The estate is known in particular for its single-cask and cask-finish expressions: H.S.E. releases aged in ex-Scotch malt whisky casks, ex-cognac casks, and ex-Sauternes casks, creating rum-world parallels to the Scotch cask-finish category.

The H.S.E. range at Bouchon spans blanc, VSOP, and XO through to the Black Sheriff (aged extra-vieux) and single-cask finishes.
