Macchu Pisco is a Peruvian pisco producer from the Ica Valley the primary pisco-producing region of Peru. Pisco is the South American brandy made from distilled grape wine, produced in Peru and Chile under competing Denominaciones de Origen. Peruvian pisco (which mandates single distillation to proof, no addition of water or spirit after distillation) is produced from specific permitted grape varieties: aromatic (Italia, Moscatel, Torontel) and non-aromatic (Quebranta, Mollar, Negra Criolla, Uvina). Quebranta is the signature non-aromatic Peruvian pisco variety.

The Macchu Pisco Quebranta is the flagship expression single-variety, non-aromatic, showing the pure fermented grape character of Quebranta without the floral complexity of the aromatic varieties. For on-premise programmes building a South American spirits section or introducing guests to pisco beyond the commercial Pisco Sour base tier, Macchu Pisco provides the single-variety Peruvian reference with documented Ica Valley origin.

30ml Pisco
30ml White Rum
30ml Coconut Cream
15ml Homemade Grenadine
15ml John D Taylor’s Falernum
30ml Seltzer
3 dashes Tiki Bitters
Method

Pit your cherries and muddle at the bottom of a tin shaker. Add all other ingredients and shake with crushed ice. Open pour into double rocks glass. Garnish with fresh cherry and edible rose of Sharon flowers!

15ml Grand Marnier
22ml Bramble Cordial
15ml Orgeat
15ml Lemon
15ml Lime
100g Black
100g Raspberry
400g Sugar
50g Cassis
500g Water
Method

Shake all ingredients with ice and pour into Collins glass. Fill lime half with sugar cube doused in Absinthe and ignite. Sprinkle cinnamon on top while on fire. Photo credit: @cheerstohappyhour
