Mezcal

Mezcal is the broader category of Mexican agave spirits: any agave spirit from a designated set of states, produced using any of the 40+ agave varieties permitted under the DO. Tequila is one mezcal produced from a single agave variety (Blue Weber) within a specific geography. The key production distinction is pit roasting: agave pinas are cooked in earthen ovens lined with volcanic rock, which imparts the characteristic smoke character absent from tequila (whose agave is cooked in above-ground steam ovens or autoclaves). Production is concentrated in Oaxaca, with significant operations in Guerrero, Michoacan, and Durango.

Bouchon's mezcal range is built around Oaxacan producers with documented single-village and single-agave-variety sourcing. Mezcal Vago sources from multiple Oaxacan palenqueros (artisan distillers) and releases each maestro, village, and agave combination as a separate expression Ensamble (blends of two or more agave varieties from one maestro), Espadin (the most planted Oaxacan agave), and the single-varietal releases track individual agave character within the same production tradition. Domingo Mezcal includes the Papalote expression from the rare Agave cupreata of the Guerrero highlands as their most distinctive release.

Method

30ml Chilli Liqueur
15ml Ginger Liqueur
15ml Lime Juice
60ml Fresh Watermelon Juice
Method

Garnish: Thinly sliced watermelon in half moon shape with Hawaiian Black Sea salt sprinkled on top. Add all ingredients to shaker and shake with ice until cold. Double strain into chilled glassware of your choice. And garnish with a thin watermelon slice with Black Sea salt atop. Cheers!

45ml Mezcal
22ml Campari
37ml Clarified Blood Orange (slightly sweetened for fortification)
15ml Double Heated Pineapple Flesh Syrup
15ml Lime
Method

Place all ingredients in shaker. Add the tiniest bit, maybe two barspoons, of liquid egg White to give a slight whipped consistency and to mellow the bitter notes. Reverse shake rigorously. Pour into cocktail glass and garnish with mint.

Method

Garnish/Ice: Frozen Watermelon as the whole drink is full of edible garnishes. Mix it all in a mixing glass with ice for 30-40 seconds, to a good level of dilution to this flavour bomb! Transfer to a glass full of frozen watermelon. Top with chilled Soda!

15ml Ancho Reyes Chilli Liqueur
15ml Orange Liqueur
15ml Light Agave Syrup
Method

Rub a piece of lime on half the rim of a glass and dip in ghost pepper salt. Put all ingredients including salt in a blender with 6 ice cubes and blend until smooth. Pour into glass and drink from the salt rim, if you dare 👻

7ml Apple Cider Vinegar
2 barspoon Charred Pineapple Syrup
Method

Place all ingredients in shaker and reverse dry shake. Double strain into cocktail glass over block of ice. Normally we tout the importance of clear ice; but not necessary here. Garnish with pineapple sage.

30ml Tequila Reposado
20ml Lemongrass and Lime Syrup
20ml Lychee Purée
15ml Blue Curacao
20ml Lime Juice
2 dashes of Orange Bitters
Method

Add tequila, syrup, purée, Curacao, lime juice and the bitters into a shaker. Shake like the gem that you are - wild and without a care in the world. Fine strain over blue ice spheres and add drops of saline to taste. Garnish with lychee twirl 💙

Method

Garnish: Caramelised Peach halve (sugar, butter, lemon juice & pinch of salt and cinnamon) Shake with ice for 20 secs, remove ice, shave for 30-40 secs, double strain into a chilled glass (coupe or on the rocks in a tumbler)
