Scotch Whisky
Scotch whisky in Bouchon's range is dominated by two independent-bottler houses, not distilleries. Michel Couvreur and Dumangin represent the independent tradition — producers who select casks, manage maturation, and release under their own names rather than the distillery's.
Michel Couvreur (18 SKUs) is the most distinctive: Belgian-born, Burgundy-based, he sourced Scottish malt and aged it in his underground Bouze-lès-Beaune cellar from 1978 until his death in 2013. The operation continues under his successors. All Couvreur whiskies are aged in ex-sherry casks (principally Pedro Ximénez) under cool, humid Burgundy conditions — the result reads differently to standard Scotch. Dumangin is the other major independent: a Champagne-based négociant house running single-cask and curated-blend releases from the major Scottish regions.
Both Couvreur and Dumangin are available as case-based listings for programs wanting depth in a single independent bottler, or as individual expressions for a diverse single-malt flight.
