Bodegas Williams & Humbert was founded in Jerez de la Frontera in 1877 by Alexander Williams and Arthur Humbert, who were brothers-in-law. Dry Sack, launched in 1906 and once shipped in a burlap sack, remains the house's best-known wine. The bodega was absorbed by Rumasa in 1972, expropriated by the Spanish state in 1983, and has been owned by the Medina family since the early 1990s.

Its cellars in Jerez are among the largest in Europe, holding more than sixty-five thousand casks under soleras that cover the full sherry range — fino and manzanilla through amontillado, oloroso, palo cortado and cream. Those same casks are the house's second trade: emptied of sherry, they go on to age the Dos Maderas rums, which finish their maturation in Jerez rather than the Caribbean.
