100% Chardonnay from estate vines aged 40-70 years across the communes of Beine, Courgis and Chablis, planted at a low density of 5,800 vines per hectare in classic Kimmeridgian limestone and clay soils. Whole-bunch pressed to stainless steel tanks, cool-fermented with indigenous yeast, then full malolactic conversion completed with indigenous bacteria and matured on fine lees for 4 months before bottling. The 2025 vintage shows bright, crystalline Chablis character — a fine, intense nose of white flowers, citrus zest and green apple with a streak of flint and saline minerality. The palate is crisp and lively with vibrant acidity, a clean linear structure and a persistent chalky finish of real elegance and precision.
