On the palate

From the steep north-facing Butchers Hill site at Belmont, Richmond, this single-vineyard Chardonnay is whole-bunch pressed, cold-settled and racked to French oak (24% new Sirugue) for fermentation and 12 months maturation with partial mlf. The nose is richly inviting — lemon curd, toasted almond, marzipan and frangipane tart give way to underlying notes of white peach and struck flint. The palate is seamless and highly textural with bright citrus tension, fine integrated oak and a long, resonating mineral finish. Built for the cellar, yet gorgeous now.
