Pooley Butchers Hill Riesling 2025

From Blocks 4 and 5 of the steep, north-facing Butchers Hill vineyard at Richmond, hand picked in early April before being pressed directly to tank and fermented for 16 days. The wine was then held on light lees for 7 months prior to gentle filtration and bottling in November 2025. Aromas loaded with freshly squeezed lime, green apple and grapefruit, with hints of meadow flowers, soft spice and crushed stone minerality. The palate is unctuous and textural with rich flavours of royal gala apple, elderflower and jasmine, brought together by a saline and crystallised ginger backbone. A harmonious dance between fruit and acidity culminates in a stony, dry finish of real persistence and precision. One of Tasmania's benchmark single-vineyard Rieslings.
