Christian Drouin works from a 17th-century Norman farmhouse in the heart of the Pays d'Auge — the Domaine du Coeur de Lion, named for Richard the Lionheart, with its glass-walled chai of copper pot stills built into the timbered cathedral of the original cider barn. Founded in 1960, the estate is now in its third generation under oenologist Guillaume Drouin. Every Drouin Calvados is grown, pressed, double-distilled and matured on site — the broadest fully-vertical Pays d'Auge selection in Bouchon's catalogue.

Build
45 ml Bas-Armagnac
20 ml Calvados
20 ml Fresh apple juice (cloudy, unsweetened)
8 ml Fresh lemon juice
5 ml Maple syrup
Garnish: thin apple fanMethod
Shake all five with ice for 10 seconds. Double-strain into a chilled coupe. Fan thin apple slices on a pick and lay across the rim. Both spirits read 'orchard' — armagnac dried, calvados fresh; the maple bridges them.
