Christian Drouin works from a 17th-century Norman farmhouse in the heart of the Pays d'Auge — the Domaine du Coeur de Lion, named for Richard the Lionheart, with its glass-walled chai of copper pot stills built into the timbered cathedral of the original cider barn. Founded in 1960, the estate is now in its third generation under oenologist Guillaume Drouin. Every Drouin Calvados is grown, pressed, double-distilled and matured on site — the broadest fully-vertical Pays d'Auge selection in Bouchon's catalogue.

Rinse a chilled rocks glass with absinthe and discard the excess. Stir Calvados, syrup, and bitters with ice. Strain into the prepared glass. Express a lemon peel over and discard.
