Hartshorn Distillery is located on a farm on the Cradle Coast of Tasmania, operating in conjunction with Grandvewe Cheeses. The distillery produces its base spirit from sheep whey a by-product of the adjacent cheesemaking operation which imparts a distinct slightly savoury, creamy textural quality to both the vodka and the gin that diverges completely from grain-spirit equivalents. Hartshorn is the only sheep-whey distillery operating commercially in Australia.
The Hartshorn gin uses the sheep-whey base with a Tasmanian botanical selection. For programmes building a genuinely differentiated spirits narrative farm-origin raw material, unusual production logic, direct Tasmanian provenance, artisan scale Hartshorn is the highest-concept Australian distillery in the catalogue. The sheep-whey origin is the single most demonstrable point of difference in the Australian craft spirits range.
