Tequila
Tequila is distilled from the pina of the Blue Weber agave (Agave tequilana weber azul), grown in the Jalisco highlands, the lowland valley around the town of Tequila, and limited adjacent states. The spirit divides by age: Blanco (unaged or rested up to 60 days), Reposado (2-11 months in oak), Anejo (1-3 years), and Extra Anejo (3+ years). Blue Weber agave takes 7-10 years to reach maturity which structures production economics fundamentally differently from grain whisky or Cognac. The two main growing regions the red clay highlands of Los Altos and the volcanic lowlands of the Tequila valley produce distinctly different spirit profiles despite using identical raw material.
Bouchon's tequila range covers three distinct production tiers. Build
50 ml Tequila Blanco
20 ml Blue Curaçao
25 ml Fresh lime juice
12 ml Simple syrup
Garnish: salt rim, lime wheelMethod
Rim half the glass with salt. Shake tequila, blue curaçao, lime juice and syrup with ice for 10 seconds. Strain over fresh ice in the prepared glass. Garnish with a lime wheel.
Blue Margarita

45 ml Reposado Tequila
15 ml Crème de Cassis
20 ml Fresh lime juice
Ginger beer to top (about 90 ml)
Garnish: lime wheelMethod
Shake tequila, cassis and lime juice with ice until well chilled. Strain over fresh ice in a highball glass. Top with chilled ginger beer; stir lightly. Garnish with a lime wheel.

50 ml Tequila Blanco (100% agave)
20 ml Triple Sec
15 ml Fresh lime juice
Garnish: salt rim, lime wheelMethod
Rim half the glass with salt (rub a lime wedge along the outside, dip in salt). Shake all liquids with ice for 10 seconds. Strain into the prepared glass — over fresh ice or up in a coupe. Garnish with a lime wheel.

20 ml Farigoule de Forcalquier
20 ml lime juice
2 dashes grapefruit bitters
Top with ginger beerMethod
Shake first four with ice. Strain into a highball; top with ginger beer. Garnish with a thyme sprig.
Balade Pour Un Original

5 ml Dolin Vermouth Dry
Lemon peelMethod
Stir with ice in a mixing glass. Strain into a chilled Martini glass. Garnish with a flamed lemon peel.
