Tequila
Tequila is distilled from the pina of the Blue Weber agave (Agave tequilana weber azul), grown in the Jalisco highlands, the lowland valley around the town of Tequila, and limited adjacent states. The spirit divides by age: Blanco (unaged or rested up to 60 days), Reposado (2-11 months in oak), Anejo (1-3 years), and Extra Anejo (3+ years). Blue Weber agave takes 7-10 years to reach maturity which structures production economics fundamentally differently from grain whisky or Cognac. The two main growing regions the red clay highlands of Los Altos and the volcanic lowlands of the Tequila valley produce distinctly different spirit profiles despite using identical raw material.
Bouchon's tequila range covers three distinct production tiers. Clase Azul (Arandas, Los Altos highlands) produces from estate-grown highland agave; their hand-painted Talavera ceramic decanter is among the most recognisable bottle designs in the trade. Don Fulano (La Tequilena distillery, Fonseca family, Jalisco highlands) covers ultra-premium and collector-tier expressions, including the Fuerte 50% Blanco and the Imperial Extra Anejo. La Cofradia (Tequila, Jalisco) provides breadth across the standard age grades. Rooster Rojo covers the cocktail and entry tier.

2 dashes Cardamom BittersMethod
1 pinch Dehydrated Lime Peel Powder Add all ingredients except the seltzer into a shaker with ice. Shake and double strain into a chilled highball glass with ice and cucumber slices. Garnish with Blue Cornflower and Rose Petals.
