Vermouth

Vermouth is aromatised wine a base of wine fortified to 15-22% ABV and infused with a blend of botanicals, of which wormwood (Artemisia absinthium or A. pontica) is the defining ingredient. European production divides into French dry style (pioneered in Chambery by Dolin), Italian bianco and rosso styles (Turin/Piemonte, Carpano), and Spanish styles (Mediterranean, sherry-adjacent). All are made for immediate consumption unlike spirits, vermouth oxidises once opened.

Vermouth is the functional backbone of a wide range of classic cocktails: Martini, Negroni, Manhattan, Rob Roy, Americano. For programs building these in house, the vermouth choice is not background it defines the cocktail's flavour profile as much as the base spirit. Method

A side of strawberries for a healthy drink snack Muddle mint leaves in strawberry liqueur. Add vermouth and lemon juice to shaker, fill with ice, and shake shake shake. 15ml Orange Colombo Aperitif @distilleries_provence
22.5ml Blanco Vermouth
1 dash Peychaud’s Aromatic Bitters
Method

1 Dehydrated Orange Slice for Garnish Fill a mixing glass with ice and add all ingredients except garnish. Stir well. Strain over a few large rocks and famished with Dehydrated Orange.

Method

Garnish/Ice: Frozen Watermelon as the whole drink is full of edible garnishes. Mix it all in a mixing glass with ice for 30-40 seconds, to a good level of dilution to this flavour bomb! Transfer to a glass full of frozen watermelon. Top with chilled Soda!

30ml RinQuinQuin Peach Aperitif @distilleries_provence
60ml Sparkling Wine or Prosecco
30ml Tonic Water
Method

Fill your goblet with large ice cubes and add your lemon wheels. Pour Cocchi Americano, RinQuinQuin and top with sparkling wine and tonic. Lightly press the mint to release the aromas and toss into your cocktail. Stir before imbibing.
