Mataro from 2025 is the best we have ever seen it. Almost equal in proportion with Shiraz in our ’25 blend, the power and spice is delicious and a true sign of how Mataro can shine in a warm year. All varieties were fermented separately in open fermenters. MLF was carried out on light lees in sea-soned French oak before deciding on the final blend which we then allowed a few months in cement tulips to bring together the intense array of flavours whist maintaining that vibrancy and freshness we love in our GSM. |
