Chop off the ears of a large chocolate bunny. Add coconut cream, Lime, Leaves and lemongrass into a shaker. Muddle well. Add the rum and Creme de cacao to the shaker. Add ice and shake. Add crushed ice into the bunny. Double strain into the chocolate bunny. Garnish with mint sprig, edible flowers, and 2 lime Leaves “bunny ears”

Garnish with dark chocolate shavings and tangelo zest Make the chocolate shavings first (I used a vegetable peeler to do it) and set aside. Add all ingredients except garnishes to shaker. Dry shake for 45-60 seconds. Then fill shaker halfway with ice, shake again until cold and strain into a regular size coupe glass. On a medium-high flame, bring all ingredients to a simmer. Gently pour over 500ml milk and let it steep overnight. Strain out mixture through the curds and coffee filter twice. Bottle and store. Pour over good ice in an Old Fashioned glass. Garnish with a mochi ball.

Cordial: Let whole raspberries and strawberries sit in cold water. Leave it long enough for the water to take on their flavour but not the colour of the berries. Afterwards, add the supasawa and Simple syrup to Cordial. The process: Coat the top of a Collins glass with icing and rim with shaved coconut. Then skewer 3 small marshmallows with a toothpick to make the snowman and add two cloves for the arms. Stick the exposed end of the toothpick (which should be on the bottom) into a large marshmallow along with a sprig of rosemary and place at the bottom of the rimmed Collins glass with just a splash of water. Set in freezer and let freeze. After it’s frozen, just pour mixture with some loose coconut shavings and enjoy!

Prep glass by rubbing a champagne flute with lemon and rolling is in the rosemary Sugar. Stir ingredients with ice and strain into prepared glass. Garnish with a coiled lemon peel and sprig of rosemary. Rosemary Sugar Rim* place several sprigs of fresh rosemary in a mason jar and fill with sugar. Seal and let sit overnight, shaking occasionally.
