Description
An 18% green-apple liqueur — Vedrenne's Granny-Smith-leaning expression in the standard fruit-liqueur tier, distinct from the chestnut-and-apple Birlou and the cidre-leaning calvados category.
Distilled and bottled in Nuits-Saint-Georges in the Côte-d'Or, made by cold maceration of the fruit in neutral alcohol in rotating stainless-steel vats, away from light and air, then sweetened with dry sugar only.
Nose: Crisp green apple, fresh and lifted. Palate: Sweet-tart apple weight with clean acidity. Finish: Bright, apple-led close.
Pairing: Built into Appletinis, sour-apple Margaritas, gin-and-apple highballs and sparkling-wine spritzes; useful behind apple-and-vanilla desserts and tarte tatin plating.
