Emile Pernot is one of the oldest surviving distilleries in Pontarlier (Doubs, Franche-Comte) the town that was the epicentre of French absinthe production before the 1915 ban, home to Pernod Fils and dozens of smaller producers. The distillery produces traditional verte (green, chlorophyll-coloured via secondary maceration) and blanche (uncoloured, clear) absinthes using grande wormwood (Artemisia absinthium), green anise, Florence fennel, petite wormwood (A. pontica), hyssop, lemon balm, and melissa in the traditional Pontarlier method.

Emile Pernot is the largest absinthe house in the Bouchon range and the primary anchor for the Pontarlier tradition. The range covers multiple expression strengths and botanical emphases from standard verte and blanche through higher-proof expressions, biologique (organic), and the Vieux Pontarlier heritage recipe. As one of the few genuinely old-established houses still operating in Pontarlier, Emile Pernot is the reference point for French distilled absinthe in the catalogue and the starting point for any by-the-glass absinthe service.
