On the palate
Izarra Jaune is a Basque herbal liqueur created in 1906 in Hendaye by the pharmacist and botanist Joseph Grattau, and now produced by Vedrenne. Several plants and spices are distilled, macerated in alcohol and Armagnac, and finished with honey; since 2023 the recipe has used Basque Country acacia honey from local beekeeper Jacques Salles. The nose shows herbal and spicy notes of cinnamon and coriander with a light touch of anise, and the palate pairs those herbs with the softness of honey. Vedrenne suggests serving it neat, over ice or in cocktails.
