Grappa
Grappa is Italy's pomace brandy distilled from vinacce, the skins and sometimes seeds and stems left after pressing for wine. The quality of grappa is determined primarily by the freshness and quality of the pomace (which must be distilled immediately or preserved, as fermentation continues), the distillation method (artisan copper alembic still vs. continuous column still), and whether the pomace comes from single-variety grapes or a blend. Monovitigno (single-grape-variety) and single-vineyard expressions represent the premium tier.

Berta's grappa makes the Italian winemaking heritage accessible in distilled form: Nebbiolo pomace reads distinctly different from Moscato pomace. The range also includes Loredan Gasparini (Asolo, Veneto) and small-batch expressions from Castellare di Castellina (Chianti Classico).
