Aperitif
Aperitif is less a production category than a use-occasion one — the grouping covers a wide range of bitter, aromatised, and fortified low-ABV drinks served before a meal to stimulate appetite. What unifies Bouchon's aperitif range is botanical complexity at drink strength: vermouths, quinquinas, wine-based aperitifs, and bitter-style preparations that are built for dilution in long pours, sparkling mixes, or light ice service.
The range includes French quinquina and wine-based aperitifs alongside the broader European aperitif tradition. For programs building house aperitif serves — a house Spritz, a low-ABV cocktail menu, or a poured-at-the-table aperitif moment — the Bouchon aperitif selection covers the main flavour profiles from wine-based bittersweet through to higher-ABV aperitif-spirit crossovers.

30ml Salers Aperitif
30ml Vermouth Blanc
15ml Mezcal
15ml Ruby Red Grapefruit Liqueur
15ml Pink Grapefruit JuiceMethod
Garnish: Grapefruit peel & 6-8 frozen watermelon cubes. Top with 30ml Fever Tree tonic Combine all in a mixing glass with ice, stir well for 1 minute, double strain into a coupe. Add frozen watermelon cubes, top with tonic.
